Half past twelve at night, table 3 orders the fourth round, and nobody has paid yet. The bill stays open, per table or per guest, and every ticket shows who rang it up. The till always charges alcohol at 8.1 % VAT, even to take away.

Open bills late into the night, and at two the drawer has to add up. A sample day, the times are made up.
Bar open
Everyone signs in with their own PIN. Whoever rings something up is shown on the ticket later.
Round after round
Table 3’s bill stays open all evening. The next round is reordered with two taps.
Age check
Four shots for table 7, and the till reminds you to check ID.
Paying separately
The group pays separately, each their own share plus tip. Only staff with permission can void.
Close
By two, the drawer is counted and the Z report is run. In the afternoon the report shows what sold at what time.
